Parmesan Crusted Fries
makes about 2 servings | difficulty level: easy
1 pound carrots, peeled
2 eggs, beaten
1 cup parmesan cheese
1/4 tsp. garlic powder
pepper to taste
Pre-heat oven to 375° F and line a large baking sheet with parchment paper
Cut carrots into french fry-sized ribbons, pat dry and set aside.
Prep breading station: beat eggs in a shallow dish and combine parmesan, garlic powder and pepper in a separate dish.
Dip each carrot individually into the egg wash, then the parmesan mixture and then lay onto the baking sheet.
Bake for 15 minutes and then flip. Continuing baking for about 10 minutes or until carrots are tender and outside is crisp.
