Cauliflower Tater Tots

These tots make for the perfect game-day snack. 

makes about 3 servings  |  difficulty level: easy


  • 1 12oz bag fresh or frozen cauliflower rice (I used this brand)

  • 1/4 cup very finely diced yellow onion

  • 1/4 cup parmesan cheese

  • 1/4 cup breadcrumbs

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion salt

  • 1 egg

  • Dash of freshly ground pepper

  1. Preheat oven to 350° F and prep a large baking sheet with non-stick cooking spray

  2. Combine all ingredients in a large mixing bowl - the mixture will resemble mashed potatoes.

  3. Scoop 1-2 tbsp. of the mixture and mold into a tater tot shape. Place on the baking sheet and repeat with remaining mixture leaving space between each one.

  4. Bake tots for about 20 minutes and then flip them and bake for an additional 10-15 minutes or until they have reached desired crispness.

Notes:

Overmixing the mixture will cause the cauliflower to release excess liquid resulting in too wet of a batter. If this happen, add additional breadcrumbs and a little bit of flour to absorb any moisture.
