Latke Waffles
The perfect spin on the traditional latke that will make any holiday gathering more exciting! The original recipe is from Smitten Kitchen.
1 medium onion
2 russet potatoes, peeled
2 tsp. baking powder
4 eggs
1/2 - 3/4 cup flour
Salt and pepper to taste
Preheat oven to 350°F and set a parchment lined baking sheet aside.
Using a box grater, grate the onion and both potatoes. Place them in either a cheese cloth or a fine strainer and push all of the water out.
Add the onion and potatoes to a large bowl and sprinkle the baking powder over the mixture. Then, add the eggs, one at a time, stirring vigorously. Then, add flour starting with 1/2 cup and adding up to 3/4 if batter is too wet. Add salt and pepper and preheat waffle iron.
In batches, add batter to waffle iron and place the finished waffles on the baking sheet. Once you have worked your way through all of the batter, place baking sheet in the oven and bake for about 7 minutes or until waffles are crisp.
Serve immediately with sour cream and/or apple sauce!
