Mini Chocolate Chip Cupcakes with Peanut Butter Frosting

Cupcakes:
1 cup flour
1 tsp. baking powder
Pinch of salt
1/4 cup butter, room temperature
1/4 + 2 tbsp. sugar
1 egg
1/2 cup milk
1/2 tsp. vanilla
1/4 cup mini chocolate chips, plus more for garnish
Frosting:
1 stick unsalted butter, room temperature
1/2 cup creamy peanut butter
1/2 teaspoon vanilla extract
1 1/4 cups powdered sugar
Preheat oven to 375°F and line 2 mini cupcake trays with cupcake liners.
Cream butter and sugar until light and fluffy then beat in the egg.
Add flour mixture alternating with the milk until well combined, then, stir in vanilla and chocolate chips.
Divide the batter among 25 or so muffin cups and bake for 10-12 minutes or until the edges are slightly brown and a toothpick inserted comes out clean. Transfer to a wire rack until cool.
Make the frosting by beating the butter and peanut butter on medium-high speed until light and fluffy. Add the vanilla, salt, and powdered sugar and continue beating until the frosting is smooth and fluffy. Transfer to a pasty bag and apply to cupcakes once fully cooled.
