Peanut Butter and Jelly Blondies

  1. Preheat oven to 350° F and line a 8x8 pan with parchment paper and non-stick spray.

  2. Combine flour and baking powder in a medium bowl and set aside.

  3. Whisk together the butter, eggs, brown sugar, vanilla and peanut butter. Fold in the dry ingredients using a rubber spatula.

  4. Add batter to prepared pan and drop tablespoon dollops of the strawberry fruit spread on top and swirl with a knife. Top with chopped peanuts and bake for about 35 minutes or until a toothpick, inserted in the center, comes out clean.

Notes:

The blondies can be stored in an airtight container at room temperature for about 1 week.
