Watermelon Salad
Serves 4
Salad:
4 cups Watermelon, cubed
3/4 cup Cucumber, finely diced
2 tbsp. Red Onion, minced
1/2 Avocado, cubed
1/4 cup Feta Cheese, crumbled
Handful of herbs (I like to use basil and mint), finely chopped
Sea Salt to . taste
Dressing:
Zest from 1/4 of a Lime
3 tbsp. fresh Lime Juice
2 tbsp. Olive Oil
1/2 Clove of Garlic, very finely minced
Combine all salad ingredients in a medium serving bowl. Set aside.
Combine all dressing ingredients in a small bowl or jar with with lid. Whisk vigorously (or shake jar) to combine ingredients.
Pour about half of the lime dressing over the salad. Serve right away with extra dressing on the side.
Recipe Notes:
This salad is best served immediately. But watermelon can be cut ahead of time and stored in an airtight container.
