Vanilla Almond Granola
A gluten-free, sugar-free treat! This yields a small batch of granola. Double the recipe to enjoy all week long!
1 1/4 cup Gluten-Free Old Fashioned Rolled Oats (I like this brand)
1/4 cup + 2 tbsp. Almonds, chopped (a mix course and finely chopped)
1/4 tsp. Cinnamon
pinch salt
2 tbsp. melted Coconut Oil
1/4 cup Maple Syrup
1 1/2 tsp. Vanilla Extract
1/8 tsp. Almond Extract
Line a baking sheet with parchment paper and preheat oven to 300°F.
In a medium bowl, combine oats, almonds, cinnamon and salt and set aside.
In small bowl, combine coconut oil, maple syrup, and the vanilla and almond extracts. Whisk until smooth. Pour into the dry ingredients and stir until evenly combined and each oat is moist.
Bake for 40-45 minutes, stirring every 10 minutes or so. Remove from oven and allow to cool completely before serving, or, store in an airtight container at room temperature for up to 2 weeks.
