French Toast Casserole
Casserole:
3 cups bread, like challah, brioche, etc., cut into 1” cubes
3 small eggs (or 2 large)
3/4 milk
2 tbsp. sugar
1/2 tsp. cinnamon
Splash orange or tangerine juice (optional)
Pinch salt
Topping:
2 tbsp. butter, melted
1 1/2 tbsp. brown sugar
1/2 tsp. cinnamon
Preheat oven to 375°F and prepare a small casserole dish (about 10.5”x7” in size) by spraying lightly with cooking spray. Add the bread to the baking dish.
In a small bowl, add eggs and milk and mix together with a whisk. Add cinnamon, salt, and orange juice (if using). Whisk again until well blended. Pour over the bread and set aside.
In another small bowl, combine butter, brown sugar and cinnamon. Drizzle over the tops of the cubed bread.
Bake for 30-35 minutes or until the tops of the cubes are toasty and crisp. Remove from over and let cool for about 10 minutes before serving.
