Gluten Free Peanut Sesame Noodles
8 oz. gluten free pasta (I used Trader Joe’s Organic Yellow Lentil & Brown Rice Pasta)
2 tbsp. sesame oil
2 tbsp. peanut better (salted, and natural is best)
2 tbsp. honey
1 tbsp. soy sauce
Juice from 1/2 lime
1/2 tsp. chili garlic sauce (I used this brand)
1/4 cup scallions, sliced, plus more for garnishing
2 tbsp. peanuts, chopped, plus more for garnishing
Sriracha for serving
Prepare noodles according to package instructions.
Prepare sauce by whisking together all of the ingredients. If sauce seems too thick, add a splash of hot water and whisk again.
Once the noodles are cooked, drain, and place back into pot. Add sauce, scallions, and chopped peanuts and toss until evenly combined.
Serve hot or refrigerate and serve cold. Garnish with extra scallions and peanuts and serve with sriracha.
