Banana Bread Cookies
1/4 cup sugar
2 tbsp. brown sugar
1 tsp. vanilla
1/4 cup butter, softened
1/4 cup greek yogurt
1 egg
1 ripe bananas, mashed
1 1/4 cups flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1 pinch salt
2 tsp. cinnamon
1/4 cup chocolate chips
Preheat oven to 350˚F and line a baking sheet with parchment paper.
Combine the two sugar, vanilla and butter together in a medium bowl. Whisk until very smooth.
Add the yogurt, egg, and banana and mix again until smooth.
Gently fold in the flour, baking powder, baking soda, salt and cinnamon using a sturdy rubber spatula. Then, fold in the chocolate chips.
Scoop dough balls, about 1.5”-2” in diameter, onto the baking sheet. Space evenly, about 2” apart.
Bake for 11-13 minutes or just before cookies begin to brown. Remove from baking sheet and allow to cool on a wire rack before serving.
