Banana Bread Cookies

Banana Bread Cookies

  • 1/4 cup sugar

  • 2 tbsp. brown sugar

  • 1 tsp. vanilla

  • 1/4 cup butter, softened

  • 1/4 cup greek yogurt

  • 1 egg

  • 1 ripe bananas, mashed

  • 1 1/4 cups flour

  • 1/4 tsp. baking powder

  • 1/4 tsp. baking soda

  • 1 pinch salt

  • 2 tsp. cinnamon

  • 1/4 cup chocolate chips

  1. Preheat oven to 350˚F and line a baking sheet with parchment paper.

  2. Combine the two sugar, vanilla and butter together in a medium bowl. Whisk until very smooth.

  3. Add the yogurt, egg, and banana and mix again until smooth.

  4. Gently fold in the flour, baking powder, baking soda, salt and cinnamon using a sturdy rubber spatula. Then, fold in the chocolate chips.

  5. Scoop dough balls, about 1.5”-2” in diameter, onto the baking sheet. Space evenly, about 2” apart.

  6. Bake for 11-13 minutes or just before cookies begin to brown. Remove from baking sheet and allow to cool on a wire rack before serving.
