Gluten Free Chocolate Almond Butter Cookies
A small batch gluten-free chocolate cookie using wholesome, organic ingredients from Brandless.
1/2 cup Almond Butter
1/4 cup coconut sugar
1/2 tsp. melted coconut oil
1/2 tsp. vanilla
1 egg
2 tbsp. + 2 tsp. unsweetened cocoa powder
1/2 tsp. baking soda
Pinch salt
3 tbsp. chopped dark chocolate
Preheat oven to 350°F and line a baking sheet with parchment paper.
Combine all of the ingredients, except the chocolate, into a medium mixing bowl. Stir gently until all is combined and the dough is smooth.
Form into 2 tbsp. sized balls and place on the baking sheet about 2” apart from one another. Press down each dough ball slightly and top with extra chocolate chunks (optional).
Bake for about 8 minutes, or until the edges have set. Allow cookies to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Recipe Notes:
Cookies are best consumed the same day they are baked, but should be stored in an airtight container if kept longer.
