Easy French Onion Soup

My mom’s recipe for the coziest, and easiest, French Onion Soup.

  • 2 large onions (or 3 medium), finely chopped

  • 2 tbsp. butter

  • 3 sprigs fresh thyme (or about 1/2 tsp. dried thyme)

  • 4-6 cups fresh beef broth (or about 1 1/2 cartons beef broth)

  • Salt and pepper

  • About 1/4 cup freshly chopped parsley

  1. Begin by caramelizing onions in a medium-sized stock pot. Heat pot over medium heat, add butter, then onions. Add a little bit of salt and mix in.

  2. Once onions begin to caramelize, add thyme and a little bit more salt. Cook for another 5-10 minutes or until onions are very tender.

  3. Add broth beginning with 4 cups, and bring to a simmer over medium heat. Taste and add additional salt, if needed, and pepper. Add another 1-2 cups of broth until you’ve reached a desired onion-broth ratio. If soup is tasting a bit too strong, add 1 cup of water.

  4. After simmering for about 10 minutes, add half of the fresh parsley and stir in.

  5. Serve hot with a cheese toast and garnish with remaining parsley.
