Spiralized Carrot Egg Nests
- About 10 oz. store-bought spiralized carrots (sweet potato or zucchini will work too!) or about 1 lb. large carrots, spiralized 
- 3 eggs (or 4 if you make your nests on the smaller side) 
- Olive oil for sautéing 
- Salt and Pepper to taste 
- In a large skillet, heat about 1 tbsp. olive oil over medium heat. Add carrots and sauté, stirring often, until tender. Season with salt. 
- Form carrots into 3 (or 4 depending on desired nest size) nests. Press down slightly in the centers to create wells for the eggs. 
- Drop the eggs into each nest and cover pan with a lid. Cook for about 5-6 minutes. Sprinkle additional salt and pepper to taste. Serve immediately with chopped chives and/or hot sauce.
